Years ago, our next door neighbors brought us a plate of this delicious Almond Torte. (It was made by their then 13-year old daughter, so you know it’s easy to make.) It was soooo scrumptious. I just had to have the recipe and they were kind enough to share. Thanks to our dear neighbors the Tolmans, at our house we call this Tolman’s Torte!
I love that this simple cake can be made within 30 minutes. Just stir up the ingredients (with a whisk – no mixer needed!) Then pop it into the oven for 25 minutes and you have this simple, yet delicious torte.
Here’s what you need:
2 eggs, lightly beaten
1 cup granulated sugar
1 stick melted butter, slightly cooled
1 teaspoon Almond extract
1 cup all-purpose flour
¼ cup sliced almonds
Preheat the oven to 350°.
In a bowl, whisk the eggs and the sugar until creamy. Add in the melted butter and almond extract. Slowly whisk in the flour and continue to whisk just until combined. Do not over-stir.
Grease and flour an 8 x 8” square pan (or line with parchment.) Pour the batter into the prepared pan and spread evenly.
Sprinkle evenly with the almond slices. (I also like to sprinkle it with a little bit of sugar before baking!)
Bake 25 minutes.
Allow to cool and cut into 16 squares.
Serve it on a pretty plate and this makes a great neighbor gift for the holidays!
