Ranch Dip Sushi for Kids AKA Veggie Wraps -

Sometimes when my daughter isn’t eating her lunch, I offer her a “dip”, even if it is not a common dipping food, it helps her finish her meal. She loves to dip everything. I have been trying to think of new fresh summer meals and wanted to think of something that would help her eat vegetables and love it. When it comes to veggies, I honestly believe that it is all about the presentation.

When you think about sushi, you don’t think about it being kid-friendly, but when you subtract the seaweed and  add the single element that all kids love, Ranch, it’s a win all around.

To make the “Ranch Dip Sushi ” for my kids, I prepped some veggies in a Regalta, (a spiralizer would work great too since a lot of you probably already have one).

After the veggies were cut, I mixed up the new Hidden Valley® Greek Yogurt Dips Mix with 1.5 cups of Greek Yogurt. The best part about using the dry mix with greek yogurt is that it is much better for you so it is a guilt free dip. By better, I mean, 98% less fat, 67 % fewer calories, 3X more protein, and 0 grams fat. So go ahead make some for you too! If you are wondering where to get these new packets, the have already hit the shelves of major stores in May 2015. They cost about $1.79.

Last simply layered the dip, then some thin sliced veggies on a whole wheat tortilla and rolled it up. I cut it into slices to make it look like sushi. After making it several times, I thought that the best combination was cucumbers, carrots, spinach and avocado. The avocado added one more layer of yum.
