If you have never made your own homemade granola, you have missed out on one of the most tasty breakfast foods ever! But actually, this granola doesn’t have to be just for breakfast. It makes a great, healthy snack. It’s a great source of fiber in your day. I love it layered with Greek vanilla yogurt and a few fresh berries!  It can even be made into homemade granola bars! Sure, store bought granola is okay, but Mama’s Best Homemade Granola is nothing short of amazing! There’s something about using the vanilla and almond flavoring together that puts this recipe over the top! The thing I like about making my own, is that I can change up the dry ingredients if I want to. The almonds can be traded for walnuts or pecans, the raisins can be changed out for Craisins, dates or dried apricots. You could even toss in some ground flax seeds or wheat germ. The basic recipe is the same, so experiment away! You’ll love this! This recipe makes a pretty big batch, but if you’d like, you can easily cut the recipe in half.

Ingredients

  • 5 cup rolled oats
  • 2 cup shredded coconut
  • 2/3 cup Grape nuts cereal
  • 2/3 cup All bran cereal, crushed (I put it in a plastic bag and use a rolling pin)
  • 1 cup sliced almonds
  • 1/2 cup butter
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 2 teaspoons vanilla
  • 1 teaspoon almond extract
  • 1 cup (total) raisins, dried cranberries or other dried fruit

Instructions

  1. Grease large roasting pan.
  2. Mix together the first 5 ingredients (plus any additional dry ingredients) and spread evenly into the roasting pan.
  3. Bake 20 minutes at 300° stirring every 5 minutes.
  4. While the oatmeal mixture is baking, combine the butter, brown sugar and honey in a microwave safe bowl.
  5. Microwave 1-2 minutes or until the butter is melted and the brown sugar is dissolved (Stir after 1 minute.)
  6. Remove from microwave and add the extracts. Stir.
  7. Remove the oat mixture from the oven and turn the oven up to 350°.
  8. Pour the syrup mixture over the toasted oatmeal mixture. Fold gently until the dry ingredients are thoroughly coated.
  9. Spread out on roasting pan again and when the oven has reached 350°, bake 5 minutes.
  10. Stir in the raisins or other dried fruit and bake another 5 minutes.
  11. Pour out onto a foil or parchment lined baking sheet and allow to cool. Store in an airtight container or zipper seal bags. This will keep for 2 - 3 weeks (if you don't gobble it up before that!)
