Frosted Toffee Cookies from Six Sisters Stuff

Six Sisters’ Stuff blog has been an inspiration to us ever since we started blogging. We have seen their talents and their blog boom right in front of our eyes. We have enjoyed getting to know them on a personal level over the last several months. Like their name says, there are six of them. That means there is all kinds of crossover-expertise going into all their content.  They do all things, food, crafts, DIY, and have  fun, inspiring tips all year round.  They have inspired us, yet again, with the release of their third, yes, third book. It’s called 12 Days of Christmas With Six Sisters’ Stuff. We were so thrilled because we got be a part of a special sneak peek into this great new book!

Not only does 12 Days of Christmas With Six Sisters’ Stuff contain tons of festive recipes, but all kinds of fun traditions, gift ideas, Christmas decor, and some just some great ways to get into the spirit of the holidays. This is the perfect book for any of you who are looking for some fresh, new ideas for your friends and family. These girls are constantly creating, and adding to their their incredible repertoire, and this book is no exception!

I was so impressed by the wide variety of ideas, that in the short time I’ve had the book, I’ve already tried making three different recipes. Can you tell I was excited? I made their very flavorful Homemade Orange Rolls and their Eggnog Cookies. (I actually made the Eggnog Cookies twice. The first time with traditional eggnog, and then a second time, with pumpkin eggnog. What??? Who knew?)

The recipe I wanted to feature today is for all you toffee fans out there. I know you’re out there. Can we form a club! Toffee has always been one of my favorite Christmas treats! For whatever reason, I really only eat it around Christmas, but oh, how I eat it around Christmas! Any of you interested in a preview of an awesome looking toffee treats from Six Sisters’ Stuff? It is happening right now, because we’re making their Frosted Toffee Cookies!

Frosted Toffee Cookies

1/2 c. unsalted butter, softened

1/2 c. brown sugar

1/2 tsp. vanilla

1 egg

1 3/4 c. flour

1/4 tsp. salt

1/4 tsp. baking soda

2/3 c. crushed heath bars (about whole bars)

1/3 c. semisweet chocolate chips

1/3 c. white chocolate chips

1/2 tsp. vegetable oil, divided

1 recipe Toffee Glaze (see below)

 

In a large bowl, beat the butter, brown sugar, vanilla, and egg on medium speed until light and fluffy.

Mix Smooth

Switch mixer to low speed and mix in flour, salt, and baking soda. Set aside 1/2  of the toffee bits for garnishing. Stir remaining toffee bits into the cookie dough.

Dough with Toffee

Roll dough into 1-inch balls and place on ungreased cookie sheets about 1 inch apart.

Bake 10 –  12 minutes, or until tops of cookies feel set when touched. Remove cookies to a wire rack to cool.

Cool on rack

While cookies are cooling, prepare Toffee Glaze.

 

Toffee Glaze

1/4 c. butter

1/2 brown sugar

3 Tbs. milk

1 1/3 c. powdered sugar

 

Heat the butter, brown sugar, and milk over medium-low heat in a 1-quart saucepan. Stir frequently until mixture comes to a boil and sugar is dissolved. Take off the heat, and stir in powdered sugar. Beat until smooth.

Once cookies are cool, cover each cookie in the Toffee Glaze.

Next, place chocolate chips and white chips in separate microwavable bowls. Add 1/4 tsp. veg. oil to each bowl. Microwave on high 1 to 1 1/2 min., stirring every 30 seconds, until melted. Using the tip of a spoon, lightly drizzle melted chocolate and white chocolate over each cookie. Sprinkle with remaining toffee bits.

Let cookies set up before serving. For quicker setting, chilling the refrigerator.

Let me just say, these girls know what they are doing!  The dough was a very mild and not too sweet. It was perfect for all the rich deliciousness going on top.  This cookie will get your toffee fix, your chocolate fix, and your cookie fix done in a hurry. Like this recipe?
