If you are looking for a great soup for a party that is simple, fun, and flavorful, look no further. Â This has been a family favorite for years. Fiesta Chicken Soup. The name says it all. Â This stuff was made for parties! Â It’s got a ton of great, hearty ingredients with a slight kick, but NOT too spicy for kids. Â Word of advice, you might want to double it because most people come back for seconds, despite feeling totally satisfied with their first bowl. Fiesta Chicken Soup
2 lbs. boneless chicken breasts (or tenders)
2 T. taco seasoning, divided
1 Tbs. minced dry onion
3/4 c. chopped celery
2 t. ground cumin
¼ t. black pepper
1 c. water
5 c. chicken broth
1 small can Mexican style stewed tomatoes
1 large can hominy (or use large can, if you prefer)
2 T. fresh cilantro, chopped
1 c. shredded cheddar cheese
1 c. crushed tortilla chips
1 avocado, peeled, pitted and diced
Sour cream
Place chicken breasts on baking sheet. Sprinkle with 1 T. taco seasoning. Bake at 375° for 25-30 minutes. (or about 15 minutes if using chicken tenders.) Cool and cut into bite size pieces. Set aside.
Bring water and broth, cumin, pepper and remaining taco seasoning, tomatoes to a boil. Add  hominy and chopped celery. Simmer about 10 – 15 minutes or until tender. Add chicken pieces and cilantro. Simmer 3 – 5 more minutes to heat through.
Just before serving, let each guest, top their soup with their choice crushed tortilla chips, avocado, shredded cheddar cheese and sour cream.
