Poached Tilapia in Taste #5 Tomato Bomb Bomba

Poached Tilapia in Tomato Bomba

A few years ago, I was making up a new way to cook fish to get out of the lemon pepper parade. After making a delicious, rich meal, my husband requested that I remember the recipe so that I could make it again. I did, and it stayed on the dinner ideas rotation. I admit, I am not much of a fish eater, but this recipe tends to take away the “fishy”, and add “rich and yummy” instead.

I didn’t know that what I was doing was “poaching” the fish until I was telling my mom about my inventive recipe. She says, “That is called poaching.”. When I googled, “poached fish in tomatoes”, tons of recipes came up. Turns out I am not so inventive. I just don’t know a whole lot about cooking.

Recently, I tried the new Taste #5 Tomato Bomb BOMBA. It reminded me of the poached dish that I made up years ago.

Taste #5 Tomato Bomb BOMBA is reduced tomato, onion, carrot, celery, wine and other goodness. Now when I want this dish, it makes my job easy. All I have to do is add some BOMBA to a can of diced tomatoes, sprinkle in some raisins for a subtle sweetness and poach. Boom! Dinner is delicious and tastes like I made the sauce from scratch.

Here is the quick version for my poached tilapia recipe:

Poached Tilapia in Umami Tomato Bomba

  • 2 cups Cooked Rice
  • 1/4 cup Umami Bomba
  • 1 large can Diced Tomatoes
  • 1/4 cup Umami Bomba
  • 1/4 cup Raisins
  • 3-4 Tilapia Filet depending on size
  • Pinenuts Optional
  • Cilantro Optional

  1. Empty the contents of a can of diced tomatoes into a cool pan.
  2. Stir in the remaining Umami Tomato Bomba
  3. Add the raisins and stir.
  4. Place thawed Tilapia Filets into the mixture.
  5. Cook through 6-10 minutes.
  6. The raisins should swell and the tomatoes should render in that time.
  7. Add in 1/4 cup of Umami Tomato Bomba to 2 cups of cooked rice.
  8. Place a scoop of Bomba Rice onto a plate, layer the fish and top with the rendered Umami tomato and raisin sauce.
  9. Add pinenuts and Cilantro to garnish.

If you are wondering where to get Umami Taste #5 products, head to your local Safeway or Albertson’s and you will find it in the Asian section.
