It seems like when you decide to watch your intake of fat and cholesterol, you feel like you have to give up flavor and eat boring meals. This is not so! In fact, it is possible to make a delicious meal, high in protein, with 36 grams of protein and 268 LEAN calories. But there is a trick to making low-fat, low-cholesterol recipes actually taste good. The secret is to start with fat-free, cholesterol-free ingredients, then add herbs, spices (and a squeeze of lime!) I made these scrumptious Grilled Mini Turkey Taco Patties starting with a package of ground turkey and All Whites 100% Liquid Egg Whites. All Whites has no yolk, so they’re naturally fat-free and cholesterol-free. These Turkey Taco Patties are delicious grilled outdoors and the zesty corn salsa on top really compliments the flavor of the patty.
You’ve gotta try these! Here’s what you’ll need to make them:
1 ¼ lb. package ground turkey
¼ cup All Whites egg 100% liquid egg whites
1/3 cup finely crushed baked (or regular) tortilla chips
2 teaspoons chili powder
½ teaspoon salt
¼ teaspoon pepper
2 tablespoons fresh lime juice
1 t. sugar
1 tablespoon olive oil
1 cup frozen, whole kernel corn, thawed
½ cup finely diced red bell pepper
¼ cup finely chopped red onion
¼ cup chopped, fresh cilantro
Fire up your grill to medium-high heat. Mix the ground turkey, the All Whites 100% Liquid Egg Whites, crushed tortilla chips, chili powder, salt and pepper.
Shape into 4 oblong patties. Refrigerate until ready to cook.
Meanwhile, mix the lime juice, sugar, and olive oil in medium bowl. Add the corn, diced bell pepper, onion and cilantro.
Stir until well combined. Set aside to allow the flavors meld.
Grill the turkey patties for 8 to 10 minutes, turning once. (You’ll know they are done when they are no longer pink in center.)
I’m telling you these turkey taco patties are incredible! The crushed tortilla chips are an unusual addition that I had never tried before, but they add a great flavor!
Serve the hot-off-the-grill turkey patties wrapped in warm whole wheat tortilla, with a spoonful of the zesty corn relish. (I like to serve them with slices of fresh limes on the side.)
This meal of only 268 calories is a great start to a healthier life! When it tastes this good, you won’t even miss the fat and cholesterol!
