A few years ago, I was making up a new way to cook fish to get out of the lemon pepper parade. After making a delicious, rich meal, my husband requested that I remember the recipe so that I could make it again. I did, and it stayed on the dinner ideas rotation. I admit, I am not much of a fish eater, but this recipe tends to take away the “fishy”, and add “rich and yummy” instead.
I didn’t know that what I was doing was “poaching” the fish until I was telling my mom about my inventive recipe. She says, “That is called poaching.”. When I googled, “poached fish in tomatoes”, tons of recipes came up. Turns out I am not so inventive. I just don’t know a whole lot about cooking.
Recently, I tried the new Taste #5 Tomato Bomb BOMBA. It reminded me of the poached dish that I made up years ago.
Taste #5 Tomato Bomb BOMBA is reduced tomato, onion, carrot, celery, wine and other goodness. Now when I want this dish, it makes my job easy. All I have to do is add some BOMBA to a can of diced tomatoes, sprinkle in some raisins for a subtle sweetness and poach. Boom! Dinner is delicious and tastes like I made the sauce from scratch.
Here is the quick version for my poached tilapia recipe:
