In one of the youth programs in my church, called Activity Days, we would go to a group leaders house and make crafts, recipes, do service, play dress up and learn etiquette. I remember one activity in particular when I was about 8 years old. We got to make and decorate our own recipe boxes, fill it with some easy recipes. One that we still use today is the whipped yogurt pie recipe. This is my favorite way to eat yogurt.
The following recipe for these pies are made with Yoplait Greek 100 Calorie cups, and are a perfect cool dessert. Plus, these desserts have much less calories than a traditional pie you might make this season, so dig in, and snack often 😉 .
Yoplait Frozen Mini Pies
Purchase list: (All ingredients are available at your local Wal-Mart)
- 3 Yoplait Greek 100 Cups any flavor (I chose Strawberry Cheesecake this time)
- Package of 6 Mini Graham Cracker Pie Crust Dishes
- Whipped Topping often located in the Freezer section
- Fresh Berries (optional for garnish)
Instructions:
Spoon in about half and half yogurt and whipped topping. If you err, err on the side of more yogurt than whipped topping.
Mix together right in the pie dish.
Add a dollop of whipped topping on top, and garnish with fresh berries.
Place in the freezer for an hour or until you are ready to eat. (Once they are frozen, you can store in a ziplock to avoid freezer burn).
Once fully frozen, remember to let them sit out for 10 minutes before serving. Yes, its okay if they are frozen still. They are yummy that way.
If you have a lot of guests coming for your fall shindigs, and want to make this recipe even easier, you can mix up the filling in a bowl and fill a large graham cracker pie crust.

I hope you enjoy this light, cool dessert.
