Mama’s Oven Baked Omelette

I have never been a huge fan of breakfast casseroles. They always seemed so dry and bland. That is until about 4 years ago when I came across a version of this recipe for a Baked Omelette. Why is this recipe so different? There are NO shredded hash browns!!!  I like hash browns as much as the next girl, but not in my breakfast casserole. They suck all the moisture, and who knows what they do with it, because they’re always just as dry as the eggs and veggies they sucked it from. This recipe uses no potato. but adds lots of yummy veggies, cheese and ham.  It is definitely a show-off recipe if you have people coming for breakfast or brunch.

Mama’s Oven Baked Omelette

6 eggs

½ t. salt

dash pepper

¼ c. flour

1 c. milk

Beat together first, then add rest of ingredients.

3/4 c. fresh, chopped broccoli

2 c. cheddar cheese, shredded

1 c. Swiss cheese, cubed

½ c. ham, cubed

¼ c. green pepper, diced

¼ c. green onion

1 fresh tomato (remove seeds and dice)

Pour into greased 9 x 13 pan.  Bake 40 minutes at 375° or until set. Edges will be golden and the middle will give a bit, but bounce back.
