Lasagna Soup

I love the fall! The weather is gorgeous, the leaves are colorful, and the air has a wonderful, subtle chill. Not only does it mean that jacket weather is upon us, but it means that soups, and comfort foods will be a large part of our meals over the next several months.

I have an ever-growing list of go-to meals at our house, that I usually have ingredients on hand for. I wanted to share one of my favorite soup recipes from that list today. It is my Lasagna Soup, and is a twist on the classic Italian lasagna dish.  This recipe has amazing, layered Italian flavor, fresh ingredients, and it is an affordable filling meal. Best of all, this soup will feed your whole family for under $10!

Two of the star ingredients in this soup are bowtie pasta and Italian sausage. Both are very affordable, easy to keep on hand, and add brilliant flavor and texture to all kinds of recipes, including this Lasagna Soup.

I most often go to Smith’s for my groceries. They have great prices, and carry ingredients that I like to use, but you can also find these ingredients at Dillion’s, Fry’s, King Soopers, Kroger. I shop the sales, and use in-season produce whenever possible. I love this recipe because 99% of the time I’ve got everything on hand to make it. That’s because whenever I see Barilla pasta, and Johnsonville Mild Italian Sausage, I snag a few. That way I always have a stock pile of pasta in my pantry, and some Italian sausage in my freezer.  I’ve used them in all kinds of meals. I’ve made pizza dishes, pasta dishes, and even some pretty creative soups, like this one. These two ingredients can add great variety and texture to all kinds of dinners. Just add some garlic, and basil, and you are well on your way to some incredible Italian flavor.

Enough chit chat! Let’s get to it! Here are the ingredients:

 

Lasagna Soup

 

1 lb. Johnsonville Mild Italian Sausage;

2 cups onion, chopped;

1 cup carrots, chopped;

2 cups mushrooms, sliced;

2 tbs. garlic, minced;

Brown Johnsonville Mild Italian Sausage in a very large saucepan over medium-high heat. Remove from pan and set aside.

Add onion and carrot to the same large pan; saute 3 minutes or until veggies are semi soft. Stir in mushrooms and garlic, and saute another 3 minutes.  Add:

4 cups chicken broth;

1 can chopped Italian-style stewed tomatoes (14 1/2 oz.);

1 cup Barilla Bowtie Pasta (dry);

2 cups of fresh spinach;

2 Tbs. thinly sliced fresh basil;

Add broth and tomatoes; bring to a boil. Stir in the Barilla pasta and simmer until cooked, about 10 minutes (or according to package directions.) Add the spinach and cook about 1 minute until wilted. Stir in fresh basil.

Optional (but highly recommended) garnishes:

Fresh mozzarella cheese, diced into ½” cubes
Ricotta Cheese
Shredded Parmesan cheese
Thinly-sliced fresh basil
