Homemade Chocolate Pudding (made it the microwave!)

For a chocolate lover, is there anything more delicious than homemade chocolate pudding? It’s really not that difficult to make and you will wonder why you haven’t ever made this before. It’s rich, and creamy and it’s chocolate-y.  And, if that weren’t enough to convince you to try some, you can easily make it in the microwave using just one bowl! (So not much clean-up!) Add a dollop of whipped cream on top and you have the perfect chocolate dessert!

Here’s our recipe:

2/3 cup sugar

¼ cup cocoa (I used Hershey’s)

3 tablespoons cornstarch

A dash or two of salt

2 ½ cups milk (warmed in microwave)

2 tablespoons butter (don’t use margarine!)

1 teaspoon vanilla

In a large microwave safe bowl, whisk together the sugar, cornstarch and cocoa until the ingredients are well incorporated.  Stir in the warm milk gradually.

Microwave on high power, for about 8 minutes, stirring with a whisk every couple of minutes.  It will come to a boil and start to thicken.

Carefully remove from microwave and add the butter. Stir until the butter is melted and the mixture is smooth. Add the vanilla.

Allow to cool slightly, then cover it with plastic wrap. (Allow the plastic wrap to touch the top of the pudding. This will help to prevent a skin from forming on the top.)

Delicious served warm or chilled. A dollop of whipped cream makes it extra decadent!
