This Fresh Vegetable Quinoa Salad rocked my world last week! I think I ate this for lunch 3 days in a row. If I hadn’t have run out of dressing, I probably would have eaten it the rest of the week as well. The peanut sauce dressing is light, and refreshing, and has a bit of a bite. I love the ginger, cilantro, and citrus notes, and adding fresh veggies always get me excited about anything I’m making. Try this salad, without chicken, as a side, or have it for the main event by adding cooked diced chicken breast before you toss it. Make this. Eat it. I dare you to tell me you don’t like it. I dare you.
