There is a little, well, huge chain restaurant here in Utah called Cafe Rio. It is now in locations all through the western states, and Virginia, and Maryland. It is a fresh Mexican Grill that once you experience it, it is immediately on your go-to list of restaurants.  There are so many good entrees that I have a hard time choosing every time I go.  One common thread in most of the dishes is a Cilantro Lime Rice.  It is killer!!! This recipe is the closest I’ve come across in the many years if been trying to recreate Cafe Rio at home.  Not only do I make this rice with burritos and other Mexicans dishes, but it is a great side dish for a BBQ, or great to take to a potluck.  None of the flavors are overpowering, but I will say, if you like garlic, you will have a new favorite rice. Cilantro Lime Rice
Saute:
2 T. butter
1 yellow onion, chopped
4 cloves garlic, minced
In a large pot, bring to a boil the following:
6 2/3 c. water
8 tsp. chicken boullion, or 8 bullion cubes
½ bunch cilantro, chopped
2 tsp. ground cumin
2 small cans diced green chiles
1 Tbs. lime juice
½ tsp. salt
Add onion and garlic to boiling water. Add:
3 c. long grain rice.
Reduce heat and simmer 30 minutes.
