1- Heat the oven to high broil and coat a 9 x 13 inch baking dish with nonstick cooking spray. This will help ensure that your tortillas don't stick while they are cooking. Using the broiler setting makes sure that your dinner is ready in minutes. You will save time and energy without sacrificing flavor.
2- In a large, nonstick skillet over medium-high heat, break apart and cook the ground beef until no more pink remains, about 7-9 minutes. Stir in the diced onions about half way through the process and cook until they are soft. Drain off any excess grease or liquid.
3- Stir in the refried beans and cook until they are heated through, which will take about 2 minutes. If you don’t have refried beans on hand, you can substitute one can of black beans, drained. But, I love the texture and flavor of the refried beans best. Next add the taco seasoning and ½ can of green enchilada sauce. Gently stir until everything is well combined.
4- Remove from heat and place about ½ C of the mixture down the center of each tortilla. You may want to soften the tortillas one or two at a time in your microwave for 12-15 seconds to make them easier to roll. Then roll up the tortillas and place in the prepared pan.
5- Pour the remaining enchilada sauce evenly over the enchiladas and sprinkle the grated cheese over the top.
6- Place them under the broiler for 3-4 minutes, just until the cheese is melted and the tortillas begin to brown lightly at the edges. Keep an eye on them as this doesn’t take very long and you don’t want them too crisp. Using the broiler instead of the oven, makes these fast and gets them to your table sooner.
