You know how apples and peanut butter go together? And you know how celery and peanut butter go together? This Nutty & Crunchy Apple Salad has them all! This is a healthy, satisfying salad for snacking, as a side dish or even a light meal! The peanut butter contains protein and healthy fat to keep you satisfied. But if you wish to make it lighter, you could use PB2 Powdered Peanut Butter. If you love the taste of peanut butter, but don’t eat it often because of its high fat content, you really ought to try it – it saves on fat calories! Both ways are delicious.

Start by dicing the apple and celery. (I like to dice my celery into very small pieces.) Drizzle with lemon juice and stir to coat. (This will prevent the apples from browning, plus it gives it a little tanginess.)

Dice or crumble a sweet and salty granola bar (any variety.)

Then, in a separate bowl, stir together the vanilla yogurt and peanut butter (or use PB2 Powdered Peanut Butter.)

Stir the peanut butter-yogurt into the diced apples and celery and stir to coat.  Just before serving, toss in the granola bar pieces and stir to coat. (Save a few pieces aside to garnish the top!)

Makes 2 servings. Refrigerate any leftovers. (This recipe can easily be increased.)

Ingredients

  • 1 medium apple, diced
  • 1 rib celery, diced
  • 2 teaspoons fresh lemon juice
  • 1/2 cup light vanilla yogurt
  • 2 tablespoons peanut butter (can use creamy or crunchy)
  • 1 granola bar, diced or crumbled (the sweet & salty are delicious!)

Instructions

  3. In a separate bowl, stir together the vanilla yogurt and peanut butter until smooth.
  4. Fold the peanut butter-yogurt into the diced apples and celery and stir to coat.
  5. Just before serving, toss in the granola bar pieces and stir to coat. (Save a few pieces aside to garnish the top!)
