Mini Tostada Cups

You may have read about our family’s annual tradition here. With the creative idea from my mother, this is what I made. (Perfect finger food) Mini Tostada Cups.

Mini Tostada Cups are pre-filled Tostitos Scoops with meat, cheese, beans and other yummy toppings. These Mini Tostada Cups would be a winning appetizer at any game night such as World Cup or the Superbowl.

Mini Tostada cups are a very simple appetizer that will make it extremely hard to eat just one, or two, or ..ahem.. seven.

Mini Tostada Cup Recipe

  • 1/2 lb. ground beef
  • Taco seasoning (1/2 package)
  • 1 can of refried beans
  • 1 ripe avocado
  • Sliced olives
  • Sour cream
  • Grated cheese
  • Tostitos Scoops ( I got 2 bags in case of broken cups)

First, place your scoops on a cookie sheet. Next, brown the ground beef with the taco seasoning. Drain the fat and stir in the refried beans. Then, use a small spoon to scoop in a small amount of the hot meat & bean mixture into each cup.

Sprinkle the filled cups with some grated cheese.

When the cheese is in place, put the sheet in the oven at 350° for about 8 minutes or until the cheese is melted and cups are warmed. Be sure not to over cook as the cheese will dry out. While it is baking, make sure your can of olives is opened and your avocados are cut in to small squares. You can use diced tomatoes too, but we were out when we made these.

Top the scoops with sour cream and garnish with the toppings. Serve immediately. They are also good when they cool, but may get soggy after too long so don’t make them in advance . The odds are, these will be gobbled up so fast that they wouldn’t have a chance to get soggy.

Have you ever seen anything similar to this? We (my mom and I) think that we made these up, but really, nothing is completely original anymore, right? Especially since the invention of Pinterest!
