Easy Back to School Breakfast

My kids start school in a few weeks and we are both excited and sad about summer ending.  I actually love the unstructured summer, but I also love having the structure of school added into my life.  School mornings are tough.  Getting the kids ready, fed, and out the door in time for school is chaos for us.  I love to sleep in, so I do everything I can beforehand to give myself a few more minutes of rest!  That’s why I love quick breakfasts.  My kids always want some long and drawn out breakfast, so I compromised.  I made a big batch of egg muffins, with different add-ins.  My kids are obsessed with them and I can sleep in!  Win-win!  Here is how I made them:

I went to WinCo (P.S. their prices are incredible!) and bought the following:

  • Hillshire Farm lunch meat  (I bought the Honey Ham flavor, which is so fresh and juicy!)
  • Ball Park angus hot dogs (A favorite around our house. Tip: throw a couple of packages in the freezer and you will always be prepared for an impromptu barbeque, or quick lunch. Or add them into these egg muffins)
  • Jimmy Dean fully cooked sausage (Seriously the perfect blend of seasoning! They are so fast to make because they come fully cooked! My kids would eat these for every meal if they could!)
  • Eggs
  • Puff pastry sheets

I let the puff pastry sheets thaw for a few minutes and heated up the oven to 350.  Then I cut each puff pastry sheet into 6 equal pieces.  Press the puff pastry into muffin tins.  Then add meat.  We cut up the fully cooked sausage and hot dogs, then put them into the puff pastry.  Then, we wanted to make ham and egg muffins, so we placed a slice of ham into some of the puff pastry cups.  Next you crack an egg into each puff pastry cup.  I added chopped parsley to make it look pretty (you can skip it if you want!)

Mine took about 25 minutes at 350 to bake.  I wanted my eggs to be fully cooked, so keep an eye on them if you want them more runny.  They came out so beautiful!  Almost too pretty to eat!  These can be frozen and heated up in the morning or put in the fridge for a couple of days.  They’ll still be amazing.

I also bought Jimmy Dean delights frittatas to keep in the freezer for those days when I don’t have something on hand for breakfast! You can’t beat sausage, egg, and cheese already made and waiting for you in your freezer!
