Best Peanut Butter Bars on the Planet!

When my girls first started school,  I can remember taking them to 1st grade orientation to meet their teachers and see their new classrooms for the first time. The Lunch Ladies had prepared Peanut Butter Bars for the refreshments. Up until that time, we had never tasted such goodness! We knew it was going to be a good day when they were serving these as the dessert with school lunch!  Later, when one of my daughters went away to college, she got this recipe from a roommate. Life has never been the same! These are a great to take to a potluck because it makes a bunch! I have played around with the recipe a little bit and…here’s what I came up with:

Ingredients

  • 1 c. butter, softened
  • 1 18 oz. jar peanut butter, divided (you can use creamy or chunky)
  • 1 c. sugar
  • 1 c. brown sugar, packed
  • 2 t. vanilla
  • 2 eggs
  • ½ t. salt
  • 1 t. baking soda
  • 2 c. all-purpose flour
  • 2 c. rolled oats
  • 1 can ready-made Milk Chocolate Frosting

Instructions

  1. Cream together butter and sugars and vanilla.
  2. Add 1/2 cup of the peanut butter.
  3. Beat in eggs one at a time. Mix well.
  4. Add dry ingredients and continue to mix, just until you can no longer see dry flour.
  5. Spread out onto greased jelly roll pan.
  6. Bake at 325° for 18 - 22 minutes or until golden, but do not over-bake.
  7. After it has been out of the oven for about 5 minutes, spread with the remaining peanut butter in the jar.
  8. Refrigerate until it firms up, then carefully spread with about ½ can ready made Milk Chocolate Frosting (it will spread easily if at room temperature.)

Spread out onto greased jelly roll pan. I use a commercial grade baking sheet like THIS ONE. The dimensions are 17 3/4″ x 12 7/8″ x 1″.

Bake at 325° for 18 – 22  minutes or until golden, but do not over-bake.

After it has been out of the oven for about 5 minutes, spread with:

the remaining peanut butter in the jar. Refrigerate until it firms up, then carefully spread with about ½ can ready made Milk Chocolate Frosting (it will spread easily if at room temperature.)

  1. I guess Jelly Roll Pans come in 2 sizes. 10 1/2″ x 15 1/2″ x 1″ (10 cup volume). & 12 1/2″ x 17 1/2″ x 1″ (12 cup volume). What size Jelly Roll Pan do you use to make yourBest Peanut Butter Bars on the Planet? I would like to make this recipe for my grandkids. I think they will love them!

      1. Thank you so much for your prompt reply. I thought these would be a great idea for their visits to our house & for camping too. I don’t like the flavor/sweetness of store bought canned frosting. Do you think I could use a milk chocolate ganache instead?

  2. How do you get the jellyroll pan into your fridge to cool. I dont think mine will fit,,,, will the peanut butter ever set up enough outside of the fridge to frost??

    1. It will set up slightly when it cools. Just make sure your frosting is room temperature so that it’s spreadable. Enjoy!
